Mexican Tamale Pie Recipe
- 1 c. minced onion
- 1 c. minced green pepper
- 3/4 pound grnd chuck
- 2 (8 ounce.) cans tomato sauce
- 1 (12 ounce.) can (1 1/2 c.) whole kernel corn, liquid removed
- 1 c. minced ripe olives
- 1 clove chopped garlic
- 1 tbsp. sugar
- 2-3 teaspoon chili pwdr
- Dash of pepper
- 1 1/2 c. shredded sharp process cheese
- Brown grnd chuck, onion and green pepper.
- Drain fat.
- Add in next 8 ingredients.
- Simmer 20-25 min till thick.
- Add in cheese; stir till melted.
- Pour in greased 10 x 6 x 1 1/2 inch baking dish.
- CORNMEAL TOPPER: Stir cornmeal and 1/2 tsp.
- salt into cool water.
- Cook and stir till thick.
- Add in butter; mix well.
- Spoon over meat mix, make 3 lengthwise strips.
- Bake casserole at 375 degrees for 40 min or possibly till lightly browned.
- Makes approximately 6 servings.
