Lemon Chicken and Couscous Loaf

  1. Preheat the oven to 350; in a large bowl, combine all the ingredients, using your hands.
  2. Pat the mixture into a 9x5 inch loaf pan, smoothing the top.
  3. Bake about 1 hour or until the loaf is firm and the top is browned.
  4. Let the meatloaf stand in the pan for 10 minutes before slicing to serve.
