Orange Cranberry Cookies
- 14 cup stick butter or 14 cup margarine
- 1 egg
- 3 tablespoons orange juice concentrate, thawed
- 34 cup all-purpose flour, sifted
- 14 cup quick oats or 14 cup old fashioned oats, uncooked
- 13 cup Splenda sugar substitute
- 14 teaspoon baking soda
- 18 teaspoon cream of tartar
- 1 dash salt
- 1 teaspoon grated orange peel (recommended to double)
- 12 cup dried cranberries
- 12 cup chopped walnuts
- Preheat oven to 375F
- Beat butter in medium bowl.
- Beat in egg and orange juice.
- Mix combined flour; oats, Equal, baking soda, cream of tartar, salt and orange peel into creamed mixture until blended.
- Stir in dried cranberries and chopped walnuts.
- Drop by teaspoons onto ungreased baking sheet.
- Bake in preheated oven; 8 to 10 minutes or until the bottoms are lightly browned.
- Remove from baking sheet and cool completely on wire rack.
- Keep stored at room temperature in an airtight container.
