Banbury Pie Recipe
- 1 x 8" or possibly 9" Pie dish
- 1 x Pillsbury Refrigerated Pie Crust according to package directions,
- 1 x zest of 1 fresh Orange
- 1/3 c. brown sugar
- 1/8 tsp Grnd cinnamon Scant 1/8 tsp Grated nutmeg
- 1 1/2 lb cooking apples (Winesap, Rome, etc), peeled, cored and thinly sliced
- 1 x juice of 1/2 fresh Lemon
- 1/2 c. Thompson Seedless Grapes (sultanas) or possibly Small sweet seedless white grapes
- 1 x juice of 1 fresh Orange Bit of Lowfat milk - to glaze sugar - for sprinkling
- Preheat oven to 400 F Prepare pie crust according to package directions for a double crust pie.
- Line pie dish.
- Prepare apples and sprinkle with lemon juice.
- Toss.
- Sprinkle orange zest in pie crust.
- Combine sugar, cinnamon, nutmeg.
- Layer apples, grapes (sultanas) and brown sugar in pie shell.
- Sprinkle with sugar and spices.
- Pour in orange juice.
- Top with pie crust, pressing edges firmly together and scalloping if you like.
- Make a cross-slit in center of pie to allow air and juices to escape.
- Brush top with lowfat milk (to glaze), then bake 30 min till golden.
- Sprinkle top with sugar and serve hot.
- Accompany with ice cream if you like.
- Note:A Banbury Pie is simply a double crusted pie.
