Cranberry Pineapple Fluff
- 2 (10 ounce) packages fresh cranberries, cleaned and drained
- 1 1/2 cup sugar
- 1 (20 ounce) can crushed pineapple, drained
- 2 cup heavy whipping cream, whipped until firm
- 1 (10 ounce) bag mini marshmallows
- 1/2 to 1 cup chopped walnuts or pecans (optional)
- 2 tsp vanilla (I use double strength and a bit extra from Penzeys)
- Grind the cranberries in a food processor or blender.
- In a large bowl, combine the cranberries, drained pineapple, and sugar.
- Add the vanilla and mix well.
- Thoroughly fold in the whipped cream, then the marshmallows and nuts, if using.
- Refrigerate for several hours before serving.
