Steak and Potato Stir-Fry
- 1-1/2 lb. beef sirloin steak, cut into thin slices Whole Foods 1 lb For $7.99 thru 02/09
- 4 tsp. oil, divided
- 4 cups peeled potatoes, cut into bite-size chunks
- 4 cups sliced carrots Target 2 lb For $3.00 thru 02/06
- 2 cups sliced mushrooms
- 2 medium yellow onion, sliced King Sooper's 1 lb For $0.99 thru 02/09
- 1/3 cup KRAFT Balsamic Vinaigrette Dressing
- 4 s, favorite flavor
- 32 fl oz (4 cups) drinking water
- Cook and stir meat in oil in a skillet on high heat for 2 min., or until browned.
- Remove from skillet; set aside.
- Add potatoes, carrots and 1 cup water to skillet.
- Bring to a boil; cover.
- Reduce heat to low; cook 20 min.
- or until vegetables are tender.
- Stir in mushrooms, onions, dressing and cooked meat; cook and stir on high heat for 5 min., or until heated through.
- Serve immediately, dividing mixture evenly among 4 plates.
- Enjoy JELL-O Sugar Free Pudding Snacks (1 per serving) for dessert.
- Serve meal with an 8 fl oz glass of water per person.
