sig's Leftover Prawn Cocktail
- 250 grams of ready cleaned and cooked jumbo prawns
- 1 tbsp Brandy
- 2 tbsp ketchup
- 1 tbsp best mayonnaise
- 1 tsp horseradish sauce
- 1 tomato, chopped
- 1 handful of spinach, washed, chopped uncooked
- 1 fingerlength and width of feta cheese, crumbled
- 1 pinch paprika
- 1 pinch cayenne pepper
- 2 slice of lemon
- mix together brandy, mayonnaise, ketchup, feta, tomatoes and horseradish
- pour over the prawns and mix gently
- arrange the chopped spinach on a plate and add the prawns to your liking
- serve with bread and lemon to drizzle over top and sprinkle with paprika and a little cayenne pepper.
