Pear and Orange Rice Pudding

  1. Bring milk, rice, sugar and rind to the boil in a large saucepan.
  2. Reduce heat and simmer, stirring often for 20-25 minutes until rice is tender.
  3. Place pears, orange juice and cardamom in a small saucepan, bring to the boil then simmer 5 minutes or until pears are just tender.
  4. Fold the Philly* through the rice mixture.
  5. Serve warm, topped with pears and juice.
