Pear and Orange Rice Pudding
- 3 cups reduced fat milk
- 3/4 cup short grain rice
- 2 tablespoons caster sugar
- 1 teaspoon grated orange rind Safeway 1 lb For $0.79 thru 02/09
- 3 pears, sliced
- 1/2 cup unsweetened orange juice
- 1/4 teaspoon ground cardamom or mixed spice
- 125g PHILADELPHIA Light Spreadable Cream Cheese
- Bring milk, rice, sugar and rind to the boil in a large saucepan.
- Reduce heat and simmer, stirring often for 20-25 minutes until rice is tender.
- Place pears, orange juice and cardamom in a small saucepan, bring to the boil then simmer 5 minutes or until pears are just tender.
- Fold the Philly* through the rice mixture.
- Serve warm, topped with pears and juice.
