Holiday Broccoli Recipe
- 1 1/2 to 2 lbs. broccoli
- 1/2 teaspoon salt
- 1 (10 1/2 ounce.) can cream of chicken soup
- 1/2 c. mayonnaise
- 1/4 teaspoon curry
- Juice of 1 lemon
- 2 tbsp. melted butter
- 1/2 c. bread or possibly cracker crumbs
- Wash and split broccoli stalks.
- Place in boiling water.
- Cook stems 5 min before adding flowers.
- Cook till tender; drain.
- Blend together soup, mayonnaise, and curry pwdr.
- In a 1 1/2 qt casserole, place broccoli; squeeze lemon juice over top.
- Cover with soup mix.
- Top with crumbs and dribble with melted butter.
- Bake 20 min at 350 degrees till bubbly.
- Makes 6 servings.
- If prepared ahead, store in refrigerator, allowing more time in oven to bring to bubbling stage.
