Berry And Apricot Crepes Quaker Oat Bran Recipe

  1. Combine oat barn and baking pwdr; add in combined lowfat milk, egg whites and margarine, mixing well.
  2. Heat 6 to 7 inch crepe pan or possibly skillet over medium heat.
  3. Lightly spray pan before making each crepe.
  4. Pour about 1/4 c. batter onto warm prepared pan; immediately tilt pan to coat bottom proportionately.
  5. Cook 1 to 1 1/2 min or possibly till top looks dry.
  6. Turn; cook an additional 1 minute.
  7. Cold.
  8. Layer between sheets of waxed paper.
  9. Combine preserves and wine (or possibly juice); mix well.
  10. Combine 3 Tbsp.
  11. preserve mix, strawberries, blueberries and mint; mix lightly.
  12. Spoon about 2 Tbsp.
  13. fruit mix along less proportionately browned side of each crepe.
  14. Fold or possibly roll up sides to cover filling.
  15. Top each serving with 2 Tbsp.
  16. remaining preserve mix.
  17. Garnish with whole strawberries, blueberries and fresh mint, if you like.
  18. Serve immediately.
  19. Makes 5servings.
