Sicilian Chicken

  1. Season chicken with half the Italian herbs and salt and pepper to taste.
  2. Heat oil in a heavy nonstick skillet over medium high heat.
  3. Saute chicken 2-3 minutes, until browned on bottom.
  4. Turn over and stir in onion and remaining Italian seasoning.
  5. Cook 2 minutes and stir in remaining ingredients.
  6. Bring to a boil.
  7. Cover skillet, reduce heat to medium low and cook 6-8 minutes, until chicken is cooked throughout.
