Mediterranean orzo salad
- 2 red peppers / small diced
- 1 medium onion/ small diced
- 25 pitted kalamatta olves/chopped
- 5 oz crumbled feta cheese
- 1/4 cup extra virgin olive oil
- 2 tsp salt
- 1 a few grinds of fresh bkack pepper
- 1 lb box of orzo pasta
- 1/8 cup white balsamic vinegar
- 1 tsp red pepper flakes/ optional
- cook orzo according to package directions.
- Drain pasta when cooked and place in large serving bowl.
- Add to pasta the chopped onions, peppers, olives and feta.
- Toss in salt, pepper, oil and vinegar.
- Also add pepper flakes if using.
- Mix salad well and chill for about 1hour.
- Enjoy!
