Mushroom and Squash Salad

  1. Saute mushrooms in hot oil on medium-high heat 2 to 3 min.
  2. or until tender.
  3. Season with salt and pepper; cool.
  4. Drain mushrooms; toss with all remaining ingredients except cheese.
  5. For each serving: Plate 1 cup salad.
  6. Garnish with small amount of shaved cheese.
