Mushroom and Squash Salad
- 1 qt. button mushrooms, quartered
- 1/2 cup olive oil
- to taste salt and pepper
- 1 qt. grape tomatoes, halved
- 1 qt. yellow squash, medium dice
- 1 qt. zucchini, medium dice
- 2 cups KRAFT Sun Dried Tomato Vinaigrette with Extra Virgin Olive Oil
- 2 cups red onions, julienned
- 2 cups prosciutto, julienned
- 1 cup fresh basil, chiffonade
- 1/4 cup Asiago cheese, shaved
- Saute mushrooms in hot oil on medium-high heat 2 to 3 min.
- or until tender.
- Season with salt and pepper; cool.
- Drain mushrooms; toss with all remaining ingredients except cheese.
- For each serving: Plate 1 cup salad.
- Garnish with small amount of shaved cheese.
