Watermelon, Arugula and Feta Salad
- 1 tablespoon balsamic vinegar
- 1 x salt and black pepper to taste
- 2 tablespoons olive oil
- 6 cups watermelon cut into 2-inch cubes, cold
- 1/2 cup feta cheese crumbled
- 3 tablespoons kalamata olives pitted and sliced
- 1 bunch arugula (roquette) washed and dried, 8 cups
- Add dressing ingredients into a small bowl, whisk until well blended.
- Keep dressing refrigerated until ready to use.
- Combine watermelon, feta cheese, olives and arugula in large bowl.
- Pour dressing over salad.
- Gently toss until evenly coated and well combined.
- Serve.
