Chilaquiles
- 8 corn tortillas, cut into pieces
- 1 tbsp cooking oil
- 4 puya chile peppers, toasted and seeded
- 1 guajillo pepper, seeded and quartered
- 2 roma tomatoes, quartered
- 1 tsp salt
- 1 clove garlic
- 1/2 onion, chopped
- 4 oz chorizo
- 1 poblano pepper, toasted, seeded, peeled, chopped
- 2 eggs, beaten
- 1 tbsp cilantro, chopped
- 1/4 cup cojita cheese
- Fry tortillas in oil until golden brown.
- Set aside.
- In a pot, place tomatoes, puya peppers, gaujillo peppers and salt.
- Cover with just enough water and boil.
- Saute onions in same pan then add chorizo and brown.
- Place tomatoes & peppers from pot into blender along with garlic and some of the boiled water and blend into smooth sauce.
- Add poblano pepper, sauce and tortilla in pan and cook at low temp.
- Cook until well incorporated.
- Add eggs and cook until eggs are done.
- As cilantro.
