Black Bean With Peppers And Cumin Vinaigrette Recipe
- 1 1/4 c. Dry black beans, soaked
- 4 c. Water
- 1 x Bay leaf
- 1/2 tsp Salt
- 1 Tbsp. Red wine vinegar
- 1 x Clove garlic, chopped
- 1/4 tsp Cumin
- 1 tsp Warm pepper sauce
- 1 Tbsp. Minced cilantro
- 2 Tbsp. Extra virgin olive oil
- 1/2 x Red pepper, diced
- 1/2 x Yellow pepper, diced
- 1/2 x Green pepper, diced
- 1 x Red onion, diced
- 4 x Scallion, thinly sliced
- Drain beans & rinse well.
- Put in a large pot with the water & bay leaf.
- Bring to a boil & simmer for 1 to 1 1/2 hrs.
- Drain.
- Combine salt, vinegar, garlic, cumin, warm pepper sauce, cilantro & extra virgin olive oil in a small bowl.
- Pour over hot beans.
- Toss well.
- Add in reemaining ingredients.
- Toss gently, garnish with fresh cilantro & serve at room temperature.
