Toasted-Pecan Horchata

  1. Reserve 6 nuts.
  2. Place remaining nuts in blender.
  3. Add water, rice and cinnamon stick; blend until smooth.
  4. Pour into bowl; let stand 3 hours, stirring every 30 min.
  5. Pour rice mixture through fine-mesh strainer into 2-qt.
  6. pitcher.
  7. Stir in milk and sugar.
  8. Serve over ice.
  9. Top with COOL WHIP and reserved nuts.
