Toasted-Pecan Horchata
- 1/2 cup PLANTERS Pecan Halves, toasted
- 4 cups water
- 1 cup long-grain white rice, uncooked
- 1 Mexican cinnamon stick (canela)
- 2 cups milk
- 1/2 cup sugar
- 1/3 cup thawed COOL WHIP Whipped Topping
- Reserve 6 nuts.
- Place remaining nuts in blender.
- Add water, rice and cinnamon stick; blend until smooth.
- Pour into bowl; let stand 3 hours, stirring every 30 min.
- Pour rice mixture through fine-mesh strainer into 2-qt.
- pitcher.
- Stir in milk and sugar.
- Serve over ice.
- Top with COOL WHIP and reserved nuts.
