Meatless Chilli
- 2 can diced tomatoes, undrained, 14.5 oz each
- 2 can kidney beans, drained, 15 oz each
- 1 can whole kernel corn, drained, 15.25 oz
- 1 medium onion, diced
- 1 large green pepper, chopped
- 2 stick celery, chopped
- 2 tbsp chilli powder
- 1 tsp ground cumin
- 1 tsp dried oregano
- 2 clove minced garlic
- 1 pinch salt, to taste
- 1 pinch ground black pepper, to taste
- Combine all ingredients in crock pot or medium sized stock pot.
- Cook on high for 5-6 hours in crock pot or simmer in covered stock pot for 45 min.
- to an hour, stirring occasionally.
- Serve chilli with sour cream, shredded cheese and tortolla chips.
