Crispy Oven Fries

  1. Combine the last three ingredients in a small dish.
  2. Stir to mix well, set aside.
  3. Scrub the potatoes, dry well, cut into 3/8 inch thick strips.
  4. Place potatoes in a large bowl, drizzle the egg substitute over the potatoes, toss to coat well.
  5. Sprinkle the prepared coating mixture over the potatoes, toss again to coat.
  6. Coat a large baking sheet with nonstick cooking spray, and arrange potatoes in a single layer on the sheet, making sure that the strips are not touching one another.
  7. Spray the tops lightly with the cooking spray, and bake at 400 F for 15 minutes.
  8. Turn the potatoes with a spatula, and bake for 10 to 15 additional minutes, or until nicely browned and tender.
  9. Serve hot.
