Veronica's Pineapple Salsa Pork with Rice

  1. Combine chili powder, cumin, paprika, black pepper and rub over both sides of pork.
  2. Heat oil over medium heat.
  3. Saute pork about 3-5 minutes on each side or until done.
  4. Remove from pan, cover and keep warm (putting it in the microwave works great- of course, don't turn it on) Using the same skillet, add pineapple with juice and salsa.
  5. Raise heat to medium-high and bring to a boil.
  6. Cook 1-2 minutes, add cilantro and oregano, and continue to cook for 1-2 more minutes, or until sauce is thickened.
  7. Serve pork over a bed of rice and top with sauce.
