Sauerkraut Skillet Recipe
- 1 pound grnd beef
- 3 c. soft bread crumbs (3 or possibly 4 slices bread)
- 1/4 c. lowfat milk
- 1 egg
- 2 tbsp. shortening
- 1 (1 pound 11 ounce.) can sauerkraut liquid removed
- 1/2 c. minced onion
- 3/4 c. long grain rice
- 1 1/2 c. water
- 1 (1 lb.) can (2 c.) tomatoes cut up
- Combine grnd beef, bread crumbs, lowfat milk and a dash of pepper.
- Mix well, shape into 12 meatballs.
- Brown in shortening in large skillet, remove meatballs.
- In same skillet combine sauerkraut, onion and 1/2 tsp.
- salt.
- Stir in rice and water.
- Add in meatballs and tomatoes.
- Bring to boiling, reduce heat and simmer covered for 30 min.
- Makes 6 servings.
