Bill's Good and Easy Butter Bean Soup
- 4 cups butter beans, shelled
- 1 (10 1/2 ounce) can bean with bacon soup, condenenced just whats in the can
- 32 ounces chicken broth low fat
- 1 cup pasta sauce, homemade if possible
- 14 cup sweet onion, chopped
- 1 teaspoon salt
- 12 teaspoon pepper, freshly ground
- 1 tablespoon butter
- Put all of the ingredients in a pot and bring to a boil for 5 minute Cover and cut temp but continue to slightly boil for another 5 minutes.
- Keep covered and simmerfor at lease 2 hours.
- Make sure the butterbeans are soft then serve.
- This freezes very well so double the recipe and freeze some for the winter.
