Vichyssoise Soup Recipe

  1. In a large heavy saucepan, saute/fry leeks and onions in butter till transparent.
  2. Add in broth, potatoes, salt and celery.
  3. Cover and cook till potatoes are very soft.
  4. Puree soup in blender.
  5. Chill.
  6. Before serving, blend in lowfat milk and cream.
  7. Sprinkle with chives.
  8. Makes 10 to 12 large servings.
