Bread and Butter Cucumber Pickles
- 10 lb. unpeeled cucumbers, thinly sliced
- 2 lg. onions, peeled and thinly sliced
- 3/4 cup salt
- 5 cups malt vinegar
- 5 cups sugar
- 1 tbsp. mustard seed
- 1 tsp. dry mustard powder
- 1 tsp. tumeric
- 1 tsp. celery salt
- Place cucumbers and onions in a large bowl and sprinkle with salt.
- Cover with ice blocks to keep pressing down.
- Let stand for 3 hours.
- Drain well, then wash with cold water and drain again.
- Add remaining ingredients.
- Bring almost to boil (but do NOT boil).
- Remove from hotplate.
- Bottle into heated jars and seal immedaitely.
