Blue Cheese Beef and Fries

  1. Preheat the oven to 400F.
  2. Lightly spray a rimmed baking sheet with olive oil spray.
  3. Arrange the potatoes in a single layer on the baking sheet.
  4. In a cup, stir together the garlic powder, paprika, and pepper.
  5. Sprinkle over the potatoes.
  6. Bake for 25 minutes, or until the potatoes are tender.
  7. Arrange the beef and broccoli on the potatoes.
  8. Pour the gravy on top.
  9. Bake for 6 to 7 minutes, or until the mixture is warmed through.
  10. Sprinkle with the blue cheese.
  11. Make fast work of slicing the potatoes for this dish by using the very fine julienne blade of a mandoline or the french-fry blade of a food processor.
