Herb Roasted Potatoes with Honey Mustard
- 5 lb red potatoes; cut in small, bite size pieces
- 3/4 oz rosemary; minced
- 1 tbsp thyme;minced
- 1 tbsp garlic powder
- 1 tbsp onion powder
- 1 cup honey mustard
- 1 salt and pepper
- 1 olive oil; as needed
- Toss potatoes with oil.
- Season.
- Roast at 400 for approximately 40 minutes or until potatoes are caramelized and fork tender.
- Toss with honey mustard in a large mixing bowl.
- Variations; Tarragon, cheese, sea salt, shallots, horseradish, scallions, bell pepper, habanero, squash, sweet potatoes, vinegar, brown sugar, maple, applewood seasoning
