Bhud Thai (Flat Noodles With Prawn, Chicken And Peanuts) Recipe
- 50 gm Dry flat rice noodles
- 4 ounce Prawns, peeled and deveined
- 4 ounce Chicken
- 2 ounce Peanuts
- 2 x Cloves garlic
- 2 Tbsp. Tamarind pulp
- 1 whl chilli
- 3 Tbsp. Fish sauce
- 4 fl ounce stock
- 1 x Egg
- 2 ounce Beansprouts
- 1 stalk spring onion
- 1 Tbsp. Sugar
- 2 Tbsp. Oil
- 1 x Inch lemongrass
- Soak the noodles in cool water, being careful not to break them.
- They will take a long time to soften.
- Soak the tamarind pulp with 1/2 c. water.
- Slice the chicken into thin pcs.
- Crush the garlic and the chilli.
- Bash the lemongrass and grind the peanuts.
- Heat the oil and fry the garlic.
- Add in the lemongrass, chicken, prawns.
- chilli and egg and stir well.
- Add in the noodles and continue to stir.
- Add in the fish sauce, tamarind juice, stock, sugar and spring onion.
- Lastly add in the beansprouts, stir quickly and remove.
- Garnish with peanuts.
