Bhud Thai (Flat Noodles With Prawn, Chicken And Peanuts) Recipe

  1. Soak the noodles in cool water, being careful not to break them.
  2. They will take a long time to soften.
  3. Soak the tamarind pulp with 1/2 c. water.
  4. Slice the chicken into thin pcs.
  5. Crush the garlic and the chilli.
  6. Bash the lemongrass and grind the peanuts.
  7. Heat the oil and fry the garlic.
  8. Add in the lemongrass, chicken, prawns.
  9. chilli and egg and stir well.
  10. Add in the noodles and continue to stir.
  11. Add in the fish sauce, tamarind juice, stock, sugar and spring onion.
  12. Lastly add in the beansprouts, stir quickly and remove.
  13. Garnish with peanuts.
