Easy Vegetable Minestrone

  1. Heat oil in a large dutch oven over medium heat.
  2. Stir in garlic and onions and cook until tender, about 5 minutes.
  3. Add zucchini, carrots and celery and cook for about 5 more minutes.
  4. Add broth, tomatoes and water and bring to a boil.
  5. Stir in orzo then reduce the heat and simmer for 15 minutes.
  6. Stir occasionally.
  7. Add kale, italian seasoning and pepper.
  8. Cook until kale is wilted, 3-5 minutes.
  9. Sprinkle parmesan cheese on each serving.
