Ham & Cheese Grits Souffle

  1. Preheat oven to 375F.
  2. Grease 1-1/2-quart souffle dish or deep casserole.
  3. Bring water to a boil in medium saucepan.
  4. Stir in grits and salt.
  5. Cook, stirring frequently, about 5 minutes or until thickened.
  6. Stir in cheese, ham, chives, egg yolks and hot pepper sauce.
  7. In small clean bowl, beat egg whites until stiff but not dry; fold into grits mixture.
  8. Pour into prepared dish.
  9. Bake about 30 minutes or until puffed and golden.
  10. Serve immediately.
