Sun Dried Tomato Hummus

  1. Add the chickpeas to a pot and cover with 4 cups water.
  2. Bring to a simmer and cook for about 15 minutes.
  3. Drain, and add to a food processor.
  4. Add the tahini to the food processor, along with the garlic, lemon juice, salt, and sun dried tomatoes.
  5. Turn on the processor and build a nice, smooth consistency.
  6. Drizzle in the ice water as you continue to process.
  7. It should be nice and smooth.
  8. Taste, and adjust any salt to your liking.
  9. Simple, easy, and delicious.
  10. Who doesnt love that, right?
