Finnish Baked Apples
- 4 apples
- 1 ounce butter
- 4 teaspoons superfine sugar
- 1 egg white
- 8 tablespoons apricot preserves
- 4 tablespoons Cointreau liqueur
- Preheat the oven to 350F.
- Wash dry and core the apples.
- If necessary, cut a slice off the bottom of each apple so it stands up.
- Place the apples in a greased ovenproof dish, dot with butter, sprinkle with 3 teaspoons of the sugar and bake for 20 minutes.
- Meanwhile, whisk the egg whites with the remaining sugar until very stiff.
- Fill the apples with the apricot preserves, pour 1 tbsp of Cointreau over each apple and top with the egg white.
- Return to the oven until golden brown.
- Serve immediately.
