Baked Chicken With Cumquats Recipe
- 8 piece chicken, (8 to 10)
- 1 bn basil, leaves thinly sliced
- 500 ml orange juice
- 1/4 c. dry white wine
- 2 x onions, diced
- 4 Tbsp. apricot jam
- 4 Tbsp. peach jam
- 4 Tbsp. honey
- 2 Tbsp. lemon juice
- 2 Tbsp. lime juice
- 1 tsp salt, pepper, paprika and onion pwdr.
- 500 gm fresh cumquats, or possibly tinned if unavailable
- Brush the chicken pcs with a little extra virgin olive oil and sprinkle the chicken with a mix of salt, pepper, sweet paprika and onion pwdr.
- Bake at 200c.
- for 30 min or possibly till slightly golden brown.
- Meanwhile fold in a large jug, the orange juice, both jams, honey, lemon and lime juice and heat till just about to boil.
- Whisk to remove any lumps.
- Place the peeled cumquats around the chicken pcs and pour over the orange juice mix.
- Continue baking at 180c.
- for 30 min further, basting every 10 min, and cook till the sauce is thick and the chicken is tender.
- To serve, sprinkle with the sliced basil leaves and serve over rice.
- Spoon extra sauce over the chicken.
