Kofte (Turkish Meatballs)
- 1 pound Lean Ground Beef (or Lamb)
- 2 slices White Bread, Torn Into Small Pieces
- 1 whole Egg
- 1/2 whole Onion, finely chopped
- 2 cloves Garlic, Finely Chopped
- 1/2 teaspoons Salt
- 1/2 cups Fresh Cilantro, Chopped
- 1/4 cups Flat-leaf Parsley, Chopped
- 1/4 cups Fresh Mint, Chopped
- 1/4 teaspoons Cinammon
- 18 teaspoons Cayenne Pepper, Or To Taste
- 1/2 Tablespoons Paprika
- 1/2 teaspoons Ground Cumin

- Preheat oven to 375 degrees F. Line a baking sheet with tin foil and set it aside.
- 2.
- Combine all of the ingredients in a large bowl and knead with your hands until well combined (or use a food processor).
- 3.
- Shape the mixture into tightly packed meatballs, molding them into ovals.
- Make sure that there is no hollow spot in the middle of the meatballs.
- Place meatballs on the baking sheet.
- Bake for 25 minutes, flipping the meatballs after about 15 minutes.
- Check after 20 minutes: if theyre brown all over, they are ready.

- Serve with a yogurt-mint dressing and Bulgur Pilaf (see my TastyKitchen recipe box for my Bulgur Pilaf recipe).
