Salted Honey Ice Cream

  1. Separate the egg yolk and white.
  2. Put the egg white and salt in a bowl and whip into a firm meringue.
  3. Combine fresh cream and honey in another bowl.
  4. Whip the mixture until firm peaks form.
  5. Add the egg yolk and mix.
  6. Add the meringue into the mixture from step 3.
  7. Mix well and pour in a container.
  8. Chill in the freezer to harden.
  9. I reduced the honey from another ice cream recipe.
  10. This is because salt brings out the sweetness of the honey.
  11. This is my favourite honey from New Zealand, "Pohutukawa honey."
  12. I recommend this because it is creamy and very delicious.
  13. This recipe is good in an affogato.
  14. Transform this ice cream into an elegant dessert.
