Microwave: New England Clam Chowder Recipe
- 3 slices bacon
- 2 (6 1/2 ounce.) cans chopped clams, drain & reserve 1/3 c. liquid
- 1 1/2 c. potatoes, cut in 1/2" cubes
- 1/2 c. minced onions
- 3 tbsp. flour
- 1 1/2 c. lowfat milk
- 1 teaspoon salt
- 1/8 teaspoon pepper
- 1 c. half and half
- Place bacon in 2 qt casserole.
- Microwave on high till bacon is crisp, about 3 to 4 min.
- Add in reserved clam juice, potatoes, and onions.
- Cover.
- Microwave on high till potatoes are tender, about 8 to 10 min, stirring after half of cooking time.
- Blend in flour.
- Stir in lowfat milk, salt and pepper.
- Microwave till thick, about 5 to 7 min.
- Stir after half of cooking time.
- Blend in half and half; stir in clams.
- Microwave at medium high till heated and thickened.
- Stir 2 or possibly 3 times while cooking.
