Microwave: New England Clam Chowder Recipe

  1. Place bacon in 2 qt casserole.
  2. Microwave on high till bacon is crisp, about 3 to 4 min.
  3. Add in reserved clam juice, potatoes, and onions.
  4. Cover.
  5. Microwave on high till potatoes are tender, about 8 to 10 min, stirring after half of cooking time.
  6. Blend in flour.
  7. Stir in lowfat milk, salt and pepper.
  8. Microwave till thick, about 5 to 7 min.
  9. Stir after half of cooking time.
  10. Blend in half and half; stir in clams.
  11. Microwave at medium high till heated and thickened.
  12. Stir 2 or possibly 3 times while cooking.
