Mom's White Clam Sauce
- 12 cup chopped onion
- 6 cloves garlic (minced)
- 12 cup olive oil
- 2 (6 ounce) cans minced clams
- 12 cup white wine
- 1 teaspoon basil
- 1 teaspoon thyme
- 14 teaspoon salt
- 14 teaspoon pepper
- 8 ounces linguine
- 14 cup seasoned bread crumbs
- Saute garlic and onion in olive oil, do not brown.
- Drain clams reserving 1/2 cup of clam juice.
- Add the reserved clam juice and wine to onion and garlic and bring to a boil.
- Cook over medium heat for 10 minutes until mixture is reduced by half.
- Stir in clams and spices, simmering for 5 minutes.
- Cook pasta according to package directions.
- Drain pasta, add clam sauce and pasta to pasta pot and mix well.
- Sprinkle bread crumbs on top and serve immediately.
