Microwave Potato Salad Recipe

  1. Microwave potatoes till done, 5 at a time, about 15 min for 5 potatoes.
  2. Cold.
  3. Break an egg into each c. of a microwave muffin pan (six).
  4. Pierce egg yolk with a toothpick and cover with plastic wrap.
  5. Microwave at 50% power for 5 to 7 min.
  6. Cold.
  7. Dice potatoes, cooked Large eggs, and onion and toss with salt and pepper.
  8. Mix remaining ingredients and add in to potato mix.
  9. Garnish with sliced Large eggs and paprika.
