Hearty Cabbage Bean Soup Recipe
- 8 ounce. kielbasa, sliced 1/4-inch thick (1 cube mine)
- 1 teaspoon oil
- 1 med. onion, minced
- 1 teaspoon salt
- 1/2 teaspoon thyme
- 1/2 teaspoon basil
- 1 sm. cabbage, shredded coarse
- 1/4 teaspoon pepper
- 1 (16 ounce.) can tomatoes
- 1 (20 ounce.) can cannellini, liquid removed
- 2 c. water
- In large pan brown sausage in oil.
- Remove sausage; pour off all but 1 Tbsp.
- fat.
- Add in onion and saute/fry till tender.
- Stir in salt, pepper, thyme, and basil; then add in cabbage, tomatoes, sausage, and water.
- Bring to boil; reduce heat, cover, and simmer 15 min.
- Stir in beans; cook 5 min or possibly till cabbage is done as desired and beans are heated through.
