Spinach Soup

  1. 1) heat the oil in a heavy pan over medium heat'.
  2. add the onion and leek and cook stirring occasionally, for about 3 minutes until they are just beginning to soften.
  3. Add the potato and season with a pinch of salt.
  4. bring to a boil ,reduce the heat, cover , and cook gently for about 25 minutes until the vegetables are tender.
  5. 2) Add sliced hot dog and spinach and continue cooking for 3-4 minutes, stirring frequently.
  6. set soup aside to cool slightly.
  7. 3) Transfer the soup to a blender or food processor and process to a smooth puree.
  8. 4) Return the soup to the pan and season to taste with salt,pepper.
  9. place over low heat and simmer until reheated .
  10. Serving Suggestions
  11. slice of butter bread.
