Grandma's Apple Cake

  1. In a medium bowl, toss together the apples and baking soda; set aside.
  2. In a large mixing bowl, beat together the sugar, Splenda, margarine and unsweetened applesauce with an electric mixer until creamed.
  3. Add egg and egg whites; beat well.
  4. Stir together the flour, cinnamon, salt, and nutmeg.
  5. Add to large mixing bowl and beat until combined.
  6. Stir in apple mixture (If you so desire, you can add a cup of chopped walnuts to the mixture as well).
  7. Evenly spread batter into a greased 13x9x2-inch baking pan.
  8. Bake in a 350 degree F oven for 30-45 minutes.
  9. Serve warm or at room temperature topped with Cool Whip.
