Beef enchiladas
- 8 tortilla wraps
- 1 lb ground chuck
- 1 packages shredded cheese
- 1 1/4 cup white rice
- 1 can enchilada sauce
- 1 can black beans
- In a medium skillet brown the meat
- Bring water to a boil for rice
- Cut tortilla wraps in half and place on wax cookie sheet
- Layer with meat then beans and top with cheese
- Roll tortillas up and place on cookie sheet and repeat until all wraps are done; top with more shredded cheese
- Bake at 350F for 20mins and serve
