Date Sugar Ginger Jewels

  1. Beat date sugar and margarine with electric mixer 2 to 3 minutes, or until creamy.
  2. Beat in egg, then molasses.
  3. Whisk together flours, ginger, 1 tsp.
  4. cinnamon, baking soda, salt,
  5. cloves, and nutmeg in bowl.
  6. Whisk in fresh ginger.
  7. Stir flour mixture into egg mixture.
  8. Cover, and chill 1 hour,
  9. or overnight.
  10. Preheat oven to 350F.
  11. Coat 2 baking sheets with coconut oil or cooking spray.
  12. Combine rapadura with remaining 1 tsp.
  13. cinnamon on small plate.
  14. Roll chilled dough into 1-inch balls.
  15. Roll in cinnamon sugar, and place 2 inches apart on prepared baking sheets.
  16. Bake 12 to 15 minutes, or until cookies look dry.
  17. Cool 3 to 5 minutes on baking sheet before transferring to wire rack.
