Custard Squares Recipe
- 1 c. sifted all purpose flour
- 1/8 teaspoon salt
- 1 teaspoon double acting baking pwdr
- 3/4 stick butter
- 1/2 teaspoon vanilla extract
- 1 teaspoon lemon extract
- 16 sugar substitutes
- 1/3 c. lowfat milk
- Finely grated rind of 1 lg. lemon
- 2 Large eggs
- Preheat oven to 375 degrees.
- Bake 25 min.
- Sift the flour, salt, and baking pwdr.
- Set aside.
- In a small bowl of an electric mixer.
- Beat the butter till soft, beat in vanilla and lemon extract; add in sugar substitutes.
- On low speed add in 1/3 of the dry ingredients and then add in all the lowfat milk.
- (The mix will curdle after adding the lowfat milk) on low speed add in remaining dry ingredients beat till smooth.
- Remove the bowl from the mixer and stir in the lemon rind; add in Large eggs and mix well.
- Custard square is thin after baking and moist.
