Dairy-Free Golden Sunshine Griddle Cakes Recipe Stein the Fine

  1. Preheat a large electric or double-burner griddle to med-low.
  2. Beat the eggs, oj conc., water and sugar in small bowl.
  3. Mix remaining dry ingredients together in larger bowl.
  4. Add egg mixture to dry ingredients and mix briefly.
  5. Some remaining lumps is fine.
  6. (Stir in raisins if desired.)
  7. Drop about 1/3 cup amounts of batter onto greased griddle.
  8. Leave until bubbles around the edges of the pancakes dont fill back in (app.
  9. 2 min), then flip and cook about another 1-1/2 minute.
  10. Makes about twelve 5-inch diameter pancakes.
  11. Fan out cooked pancakes on a serving platter and sprinkle a little confectioners sugar on top.
  12. They are good w/ or w/o syrup.
