Sig's Lentil and Green Olive Salad
- 125 grams precooked or canned puy lentils
- 6 Queen olives
- 1 pickled green jalapeno chilli pepper
- 1 small tomato ,seeds removed
- 1/2 tbsp mayonnaise (optional )
- 1/4 tsp turmeric
- 1 clove minced (crushed) garlic (optional )
- Either use ready to eat lentils or canned and rinsed lentils , stir in the halved olives and chopped jalapeno pepper, remove the seeds from the tomato, discard the seeds.
- Chop the tomato into small pieces and add to the lentils
- Add all the other ingredients and gently stir.
- Serve on its own, resting on some lettuce, or with pasta or rice and enjoy.
- This will be enough for two people as a side salad
