Barbecue Meatballs and Vegetables
- 1/2 cup Miracle Whip Original Spread
- 1/2 cup Kraft Original BBQ Sauce
- 1/4 cup honey
- 1 Tbsp. chili powder, divided
- 1 tsp. ground black pepper, divided
- 1 tsp. cayenne pepper, divided
- 1 lb. (450 g) extra-lean ground beef
- 1 green pepper, cut into chunks
- 1 onion, sliced
- 1 cup sliced fresh mushrooms
- 1 cup each green and yellow zucchini slices
- 1 can (14 fl oz/398 mL) pineapple chunks in juice, drained
- 2 Tbsp. chopped fresh parsley
- Combine Miracle Whip, barbecue sauce, honey, 2 tsp.
- chili powder, and 1/2 tsp.
- each black pepper and cayenne pepper.
- Mix meat and remaining chili powder, black pepper and cayenne pepper just until blended; shape into 12 meatballs.
- Cook in large skillet on medium-high heat 10 min.
- or until evenly browned, turning after 5 min.
- Remove from skillet; drain.
- Add vegetables and pineapple to skillet; cook on medium heat 5 min.
- Stir in Miracle Whip mixture and meatballs; cover.
- Simmer 15 min., stirring occasionally.
- Stir in parsley.
