Spinach and Mushroom Strata
- Olive Oil
- 2 cups Mushrooms, Sliced
- 1 Small Onion, Diced
- Salt And Pepper
- 1/2 bunches Fresh Spinach
- 1/2 loaves Sourdough Bread, Cubed
- 2 cups Swiss Cheese
- 6 Eggs, Beaten
- 1- 1/2 cup Milk
- Butter a casserole dish.
- Do one turn around a skillet with olive oil.
- Add mushrooms and onion, season with salt and pepper.
- Saute until tender.
- Remove and set aside.
- Do one more turn of oil around the pan.
- Add spinach and cook until wilted, about 2 minutes.
- Start by layering 1/3 of the diced bread, then top with 1/3 of the spinach and mushroom and Swiss cheese.
- Repeat layers, ending with the bread.
- Mix beaten eggs and milk and pour over casserole.
- Cover tightly and refrigerate at least 2 hours if not overnight.
- Cook at 350 degrees F covered for 40 minutes.
- Uncover and cook another 20 minutes or until golden brown.
- Note: The great thing about the recipe is that it easily can be doubled or changed.
- You can add sausage, different veggies, cheesesmake it your own!
