Scrummy Pork Ribs
- 1 kg pork spareribs
- 12 cup chinese marinade (bought from Chinese grocery store)
- 2 tablespoons Chinese fish sauce
- 4 tablespoons dark soy sauce
- 1 cup tomato ketchup
- 12 cup tinned crushed pineapple plus 1/2 cup of the syrup
- 3 tablespoons clear honey
- Cook ribs for one hour at 180C in baking tray (a couple of inches deep roasting tin is ideal).
- Mix all ingredients together, pour over ribs in baking tray, return to oven and bake for an hour or until ribs cooked.
- If necessary, reduce heat to 160C for last half hour to make sure the ribs don't burn with the sweet sauce on them.
- Cooking time is dependent on thickness of rib meat - the thicker the meat the longer the cooking time.
- This is a little bit of trial and error as every time they are cooked the length of time varies according to the size of the ribs.
