Carrot ginger soup
- 1/4 cup butter
- 1 cup onion, chopped
- 3 cup carrots (peeled and chopped)
- 1 large potato (peeled and cubed)
- 1 celery
- 3 cup chicken broth or vegetable broth
- 1 tsp ground or fresh ginger
- 1/2 cup milk
- 1 tsp curry powder
- 1/2 tsp salt
- 1 black pepper (to taste)
- Heat butter over low/medium heat, saute onions until translucent
- Add carrots, potato, celery, broth and ginger.
- Cover and bring to boil.
- Reduce to low heat, simmer for approx 30 min or until vegetables tender.
- Stir occasionally.
- Blend until smooth.
- Stir in milk, curry, salt and pepper.
- Simmer over low heat until heated through and reaches desires consistency (approx 10 min)
