Date Night Sherry Chicken
- 2 whole Chicken Breasts
- 1 cup Golden Sherry
- Seasoning Salt To Taste
- 4 slices Turkey Bacon
- 1 cup Sliced Portobello Mushrooms
- 1/2 whole Medium Yellow Onion, Thinly Sliced
- 2 slices Sharp Cheddar Cheese
- Butterfly chicken breasts before placing them into a Ziplock bag.
- Pour 1 cup of golden sherry over the breasts and season lightly with seasoning salt.
- Marinate for at least 2 hours before cooking.
- Cook turkey bacon in a skillet over medium heat until crisp, then remove from pan.
- Using the same skillet, saute mushrooms and onions in the bacon grease over medium heat until tender (about 3 minutes).
- Remember, these will get blackened a bit.
- Move to a plate until youre ready to assemble the dish.
- Pre-heat grill or electric griddle.
- If using the griddle, I preheat mine to about 300 degrees F. Cook chicken until internal temperature reaches 160 degrees F. Time will vary based on the size of the chicken breast.
- Once your chicken is grilled, move chicken to individual plates.
- Pile onions and mushrooms on top of each chicken breast, then layer on bacon slices, topped with 1 slice of cheddar cheese.
- Melt cheese in the microwave, and serve.
